A Love Letter To Kale

Dear Kale, 
I love you. 
Yours truly, 

Where do I begin? If you know me, you know I love kale. I am not saying that just because it is a superfood, i actually like the taste too. Kale is so versatile and not to mention it is one of the healthiest foods of all time.

Kale is LOADED with vitamins, especially vitamins A and K. Kale contains many minerals needed for proper functioning too: manganese, iron, and potassium are just a few of the nutrients kale is packed with.

Kale provides cholesterol-lowering benefits especially when steamed, this is because the fiber components in kale bind together with bile acids in your digestive tract better when they are steamed. When this binding process takes place, it’s easier for bile acids to be excreted, and the result is a lowering of your cholesterol levels.

Wait it gets better…

Kale’s lowers your risk for cancer, cleanses your system of toxins, and improves immune functioning.

I use kale in my eggs, salads, steamed or sauteed with other vegetables, in the oven with seasonings as kale chips and in smoothies. Kale is so great and I urge you to give it a try!

My go to breakfast is:
2-3 eggs
A handful of kale
Grape Tomatoes or a couple slices of a roma tomato

Pair this with a piece of fruit or toast and voilá: delicious!
