Get those vegetables in with this delicious recipe! This sweet potato and quinoa salad is a perfect end of summer-going into fall favorite of mine. Enjoy!
You will need:
- 2 sweet potatoes peeled and cut into 1/2 inch cubes
- 1 1/2 cups water
- 1 cup quinoa
- 1 cup broccoli
- 1/2 cucumber
- 2 bell peppers, chopped
- 1 lime
- 1/2 cup cilantro
- 6 tablespoons olive oil
- 2 tablespoons lemon juice
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
To start, preheat the oven to 400 degrees.
Toss the sweet potatoes in two tablespoons olive oil, and roast on a baking sheet for 20-25 minutes.
Bring a pot of water to a boil and add quinoa, lower heat and simmer for 15-20 minutes. Add broccoli to quinoa and cook while covered for 2-3 minutes.
Add the remaining ingredients together in a bowl. Add the sweet potatoes and quinoa. Toss in the large bowl and top with cilantro.
